Shrimp Spread
We want to thank Sharon Preslar of Port O'Connor, Texas for contributing this month's recipes. Sharon's husband, Jerome, worked as a shrimper in the local bays for thirty years. Sharon says that when your husband is a shrimper you learn to prepare lots of tasty shrimp dishes. We hope you enjoy these as much as we did.
2-pounds boiled shrimp (chop in food processor with one medium onion and two ribs of celery). Place mixture in bowl and add 4 Tbs of dill relish.
Stir in 3 Tbs Worcestershire sauce and 4 or 5 Tbs of mayonnaise (enough to make it creamy and stick together).
Salt and pepper to taste.
Chill and eat on crackers or make into sandwiches.
This was served at my bridal shower 42 years ago and was made by Mrs. Clara Hawes of Port O'Connor, Texas, and was the very best.
