Posada Del Colorado Drum Stew
2 onions chopped
3 stalks celery chopped
1 green bell pepper chopped
2 to 3 bunches carrots, skin on, chopped
3 cloves garlic, minced
olive oil
2 cans tomatoes
1 tsp salt
pepper
Tabasco to taste
2-3 lbs. black drum fillets, cut into 1" strips
1-2 cups white wine
1 tbsp basil
1 tbsp thyme
Sauet onions, celery, green peppers and garlic in oil over low heat about 15 minutes.
Add wine, carrots, tomatoes, basil, salt, pepper and thyme and continue to cook covered 20-30 minutes.
Add fish, simmer 10-15 minutes
Serve over steamed rice.
