Capt. Bill’s Onion Blossom Baked Fillets
Capt. Bill Pustejovsky says, "This recipe is as easy as a bowl of cold cereal and tastes so good you'll wonder how you lived so long without it." And you know a fisherman never tells a lie. You can use any fillets you like; trout, redfish, drum, flounder, snapper, sheepshead I think even a hardhead might taste pretty good with this recipe.

Ingredients:
Half pound of fillets for each dinner guest
Half stick real butter
Favorite seafood seasoning
Robert's Reserve Onion Blossom Horseradish Dip (find it at HEB Plus Stores)

Method:
Preheat oven to 475. Coat glass baking dish liberally with butter. Rinse fillets and pat very dry with paper towels. Dust fillets with favorite seafood seasoning (we like Tony Chachere's Original Creole Seasoning.) Place three thin chips of butter on each fillet and bake for 10 minutes. Remove from oven and brush fillets with melted butter from bottom of baking dish, then spread tops evenly with Robert's Reserve Onion Blossom Horseradish Dip. Return to oven and bake 3 minutes. Remove immediately and serve.
