BBQ Fillets
Place fillets and throat sections in gallon-size Ziplock
bag. Add ½ cup Ultimate Meat Marinade and
Finishing Sauce (made by Canyon Foods and available at HEB) and 2
tablespoons soy sauce. Allow fish to marinate at least 30 minutes before
cooking.
Form heavy weight aluminum foil into a shallow “boat” and
coat with PAM Professional High-Heat Cooking Spray. Note: the high heat formula
cooking spray does a better job of preventing fillets from sticking.
Arrange fillets and throat sections on coated foil and cook
in medium-hot covered charcoal or gas grill. Cooking time varies with fillet
thickness and grill temperature. Check with fork; the fish is done when the
thickest parts flake easily, usually 10-15 minutes. Do not cook them dry as
much of the natural flavor will be lost.
