Tequila Sunset Redfish
Grilled redfish on the half-shell has been a longtime favorite of many Texas fishermen. Many thanks to Walt Kalinowski for sharing this very unique and delicious recipe.
2 large half-shell redfish fillets
2 Tbsp tequila, drizzled evenly on each fillet
1 Tbsp Kahlua coffee liqueur, drizzled evenly on each fillet
1 orange, halved, squeeze juice on each fillet
Monterey Steak Seasoning, sprinkle liberally
McCormack Roasted Garlic Seasoning, to taste
Honey, enough for a light coating on each fillet
1/2 stick butter cut into eight pieces, four per fillet
Grill @ 375F for 25 minutes or until fillet flakes easily.
Yields - 4 Servings
